Healthy banana muffins!!! (Contains nuts)

So as I am dairy, gluten, and egg intolerant. I have to cook most of what I eat for safety and health reasons. I have created so many receipes so here is a simple and yummy one to follow.


  • 3-4 ripe mashed bananas
  • Heaped teaspoon cinnamon
  • Flax egg / Apple Sauce
  • 1 cup of roughly sliced (whole) pecans/walnuts/ almonds
  • Option: add (brand:enjoy life) chocolate chips
  • 1-cup of nut milk
  • 1/2 cup vegetable oil
  • Extra: Heaped teaspoon of organic coconut oil
  • 1 tablespoon of coconut sugar
  • A pinch of Sea/Rock salt
  • Dash of vanilla essence
  • Flours: 2 cups of gluten free flour (cassava/rice/coconut)
  • Pinch of baking powder

If ingredients seems too dry add more milk / oil


  1. Preheat oven to 180 °C /350 °F
  2. Mix wet ingredients and dry separately
  3. Then combine
  4. Use cupcake mould with papers
  5. Add mixture to the moulds (I use an ice cream scooper) to keep the shape nice a round.
  6. Cook for 50 minutes
  7. Leave to cool for 5-10 minutes before consuming

I thought it may need an inching but it was so moist and sweet it didn’t. But will update a great homemade icing recipe soon!
