EASY YUMMY HEALTHY LUNCH RECIPE 

I cook most of what I eat as it’s safer for me. But I love to cook and also make things easier. This simple recipe takes no effort really. (Sorry about the presentation I was in a hurry to eat it..)

WHOLE TIME: 1Hour

Ingredients: all organic.

  • Sweet potato 
  • De-shelled and de-veined prawns
  • Fermented garlic (also can use regular) 
  • Olive oil / Coconut oil
  • Balsamic /apple cider vinegar 
  • Raw Cucumber & Spinach
  • Dried Green Herbs, Salt & Pepper

METHOD: 

  • Wash all ingredients thoroughly 
  • No need for any peeling 
  • Preheat oven to 180°c
  • Pierce whole sweet potato a few times with a fork. Place in the microwave for 7 minutes 
  • Place on baking sheet. Rub vegan butter and himalayan salt on potato (careful of the heat) 
  • Bake for 45 minutes 
  • Sauté prawns in coconut oil and slices garlic, salt and peppers and herbs 
  • Slice cucumber along with spinach and plate
  • Add cooked prawns to plate
  • Once cooked, scoop out the sweet potato with a fork and plate
  • Add dressing of olive oil and apple cider vinegar.
