This recipe is:

  • Gluten free
  • Dairy free
  • Egg free
  • NOT Nut free
  • Low GI sugar
  • Easy to make



  • Ground almonds + any nuts
  • Melt vegan butter in microwave for 10 seconds
  • Combine butter. Pinch of salt. Ground nuts.
  • Put in fridge to set


  • Coconut milk
  • 2 tablespoons of Corn starch with some water and dissolve
  • 2 tablespoons Coconut sugar
  • Dash of vanilla
  • Pinch of salt
  • Bring all to the boil till thick
  • Pour over the base
  • Once cooled place in fridge


  • Melt some dark chocolate (Bain Marie)
  • Place as much as you want on top of set coconut layer
  • Sprinkle on desiccated coconut
  • (Optional) Sprinkle on PALEO crunch
