RAW VEGAN ORGANIC MULBERRY LAYERED CUPCAKES // EARTH CIRCLE ORGANICS

Heyyy Friends,

I’ve been experimenting and been trying out my raw cupcake recipe. And now I would like to share it with you step by step.

I was kindly given this huge packet of organic raw white mulberries from Earth Circle Organics. So let’s start with nutritional benefits before jumping into this recipe shall we.

What to do with them? 

  • Add them to your shakes (slightly sweet) 
  • Add them into your cereal or salads in replacement of raisins (similar texture)
  • Add them into your trail mix and carry in your bag as a snack 
  • Use them in baking (raw or cooked) as a topping or base 
  • Its also very popular to drink it as a tea

What you need: 

  • Ingredients (listed step by step) 
  • High speed food processor 
  • Spatula & Spoon
  • Cake mould 
  • Freezer

Step 1: (The base) – adjust your meristem wants to suit the quantity you are making  

  • Add a good handful of dried raw mulberries into your food processor along with some raw almonds
  • Add two pitted medjool dates 
  • Small Tablespoon of Coconut oil 
  • Small Tablespoon of Cinnamon 
  • Blend till sticky
  • Then pat down firmly into your mould and set aside



  

Step 2: (1st layer of filling)

  • One whole ripened banana 
  • Raw cashews 
  • Few drops of vanilla extract
  • One medjool date 
  • Coconut oil 
  • Blend till smooth
  • Top onto the cupcakes

  

Step 3: (2nd layer of filling)

  • 3 medjool dates OR 2 tablespoons of maple syrup 
  • Pecan nuts 
  • Lots of cinnamon
  • Teaspoon of vanilla extract
  • Small amount of Coconut water
  • Half a tablespoon of Cacao powder 
  • Blend till smooth and thick
  • Top on to the first layer

Step 4:  (The Topping)

  • I used some organic reduced fat unsweetened desiccated coconut 
  • Sprinkle all over the topping, it should stick well
  • Add a pecan on top for decoration
  • Place in the freezer for at least 4 hours

 


Step 5: (The Result)

It set fantastically. I ate it around 5 minutes after removing it from the freezer, and the layers taste and look great.

It’s delicious and sweet and the mulberries are a great alternative to a crust!! Try it for yourself. (If you don’t eat it all… Not sure why! Place it back in the freezer for storing) ☺️
