Homemade Oat & Seed Bars

Snacking is all the rage, it’s so important that when you are constantly burning energy – to keep refuelling yourself but with healthy foods and not junk! So make something healthy and  delicious that you can pop into your bag to grub when your out and about.

Ingredients: (qty: to your hearts desire) 

  • Gluten Free Oat Bran or Old Fashioned Oats
  • Coconut flour
  • Goji berries
  • Sunflower seeds
  • Pumpkin seeds
  • Almonds
  • Cinnamon
  • Maple syrup
  • Pinch of salt
  • Chopped dates
  • Raw nut butter
  • Vegan chocolate chips
  • Coconut oil
  • Chia egg (let chia seeds sit in a some water for 10 minutes-don’t drain)
  • Vegan protein powder (optional)

Method: 

  • Heat the oven to 160°c
  • Melt the chopped dates and the nut butter until smooth
  • Add all the ingredients into a bowl and mix well
  • Press the mixtures (I used food gloves) into an oven baked fish lined with parchment paper
  • Bake for 12-15 minutes
  • Once cooled remove and slice into flapjack styled slices
  • Transfer into a container or wrap individually in aluminium foil and pop it in your bag
