Dark chocolate – Coconut Peppermint Bark

A quick and delicious holiday treat – gluten, dairy free. No baking required. This recipe is not sugar free! But as it’s a special holiday recipe enjoy and share and the mint will help with any degestive woes.

This is possibly the best chocolate that I have EVER tasted- you will be pleasantly surprised.

Ingredients 

  • Raw coconut butter 
  • Raw cocoa butter 
  • Dark chocolate 
  • Dried cranberries and goji berries 
  • Walnuts and hazelnuts 
  • Dessicated coconut
  • Candy canes or peppermints

 

What to do

  • In a blender grind the peppermint or candy canes into medium and fine chunks 
  • Add your dark chocolate and coconut butters into a bowl and melt in the microwave or in a Bamboree until smooth – stir every 30 seconds 
  • Line a baking tray or chosen mold with parchment paper 
  • Mix some berries, nuts and peppermint into the chocolate (save a few for topping)
  • Lay out onto the tray 
  • Top with dessicated coconut nuts and berries 
  • Place into the freezer for 2-3 hours 
  • Then cut with a sharp knife into your desired shape and store in a cool place
