It’s homemade- Free from – dairy, gluten and eggs. Using organic ingredients that will NOT spike your blood sugar


  • 1 tablespoon of Raw sugar
  • 2 tablespoons of vegan butter
  • 1 large grated carrot (peel and wash first) 
  • Large handful of halved walnuts 
  • 1 tablespoon cinnamon
  • Pinch of sea salt 
  • Pinch of baking soda 
  • 1/2 teaspoon size of vanilla pods or essence 
  • Teaspoon of xantham gum (chia egg optional)
  • 1.5 cups of rice flour or gluten free flour mix
  • 1/2 cup of water or vegan milk


  • Mix all ingredients and place into baking tray 
  • Bake for 30 minutes at 200°
  • Don’t over cook 
  • Wait to cool 
  • Then top with vegan icing / strawberries (optional)

Vegan icing: Raw soaked cashews, vanilla, maple syrup, salt, vegan milk and blend till smooth and thick – you can add in a small amount vegetable powder or juice for change in colour
