Homemade Slowcooker broth / stock – not vegan

Apart from making your own fantastic bone broth it’s not for everyone. Here is an alternative idea that you can make in a rice or a slow cooker.

Within just 2 hours you will have yourself a warming, hearty, all natural nutrient rich soup / stock / broth. With no fillers making it gluten free and vegan.

Ingredients: (made 2litres) 

  • 10 dried shiitake mushrooms 
  • 2 large leeks 
  • 6 spring onions
  • 3 celery stalks 
  • 1/2 turnip 
  • 1 butter nut squash 
  • Handful of soaked and peeled almonds 
  • 1 large carrot 
  • 1 whole dried coconut skin and meat 
  • 1.5L of boiling water 
  • Tablespoon of sea salt 
  • One large sweetcorn 
  • 5 cloves of garlic
  • 100ml of Apple Cider Vinegar
  • Hearty herbs and spices (optional) 

 

Method: 

  • Wash cut and peel all the ingredients and put into the pot 
  • Simmer on medium for 2 hours 
  • Check and stir after 1 hour 
  • Drain in a colander and save the liquid
  • Drink as it is, freeze into cubes, add into recipes as required
