Popped Quinoa Superfood Treats- MOTHERS DAY RECIPE

Happy Friday! Here’s a quick yet delicious superfood treat, it’s gluten free, vegan and all organic. A wonderful recipe for mothers day this weekend and great for kids to make too!

Prep time: 5 minutes

Ready in: 30 minutes

Ingredients: (made 12 mini treats) 

DRY

  • Popped quinoa (100g)
  • Sliced Almonds (50g)

WET

  • Coconut oil (100ml)
  • Carob / Cacao powder (50g)
  • Maple Syrup (80ml)
  • Vanilla extract (1tsp)
  • Pinch of sea salt (optional)
  • Nut butter (optional)
  • Coconut Butter -1tbsp (optional)

Method:

  • Place all of the dry ingredients into a large metallic bowl
  • Place all of the wet ingredients into a saucepan
  • Melt the mixture together on a low heat
  • Once smooth immediately transfer into the dry ingredients and mix well
  • Pour into your mold of choice and refrigerate for a minimum of 30 minutes
