One Pan Enoki Mushroom ‘Pasta’

One of my favourite foods are mushrooms and pasta. So here I share a favourite recipe with you. A no carb dish, full of healthy fats, delicious and crunchy. You can have it as a main meal or even a side dish it’s also Gluten free, vegan and full of fibre.

Ready in: 10-15 minutes


Ingredients: 

  • Huge handful of raw organic enoki mushrooms
  • 3 cloves of diced garlic
  • 2 tbsp of Sesame seeds
  • 1 tbsp of sesame oil
  • 2 tbsp of olive oil
  • 6 spears of asparagus
  • Handful of coriander
  • Salt, pepper, tamari sauce / coconut aminos
  • 1tsp of pumpkin seeds (optional)

Method: 

  • Chop off the end part of the enoki mushrooms and wash them well
  • Wash and dice the coriander and asparagus
  • Into a hot pan dry fry the pumpkin seeds for a minute, then set aside
  • Into the pan add the olive oil, diced garlic, the vegetables and mushrooms
  • Once browned add in the seasonings, sauce and sesame oil
  • Toss until browned and evenly combined
  • Sprinkle on the sesame seeds and serve immediately
