Taro Tacos 

An easy and healthy alternative to wheat tacos. Taro root is safe for those with digestive issues and those who can’t handle gluten. They are a slow digesting carbohydrates, a fine source of fibre that don’t not spike your blood sugar and have a valuable amount of vitamins too.

Ready in: 40 minutes 



  • Taro Root


  • Diced Avocado
  • Salt, lemon juice
  • Diced Tomatoes
  • Minced garlic & Spring Onion


  • Diced tomatoes
  • Minced garlic & spring onion
  • Salt, lemon juice
  • Diced coriander
  • Drop of olive oil


  • Rehydrated brown or black beans
  • Diced garlic
  • Olive oil
  • Cloves
  • Salt, Cumin, Black Pepper


  • Peel The taro Root and slice into 1″Slices
  • Place onto a baking tray and lightly dress with some olive oil
  • Bake at 200°c for 30 Minutes
  • Mix the salsa ingredients together and set aside
  • Combine the guacamole ingredients together and set aside
  • Using plain cooked beans, drain and set aside, in a hot saucepan add in some olive oil and fry the ingredients for the beans (above) until browned, add in the beans, mix and mash a little bit
  • Once the taro is cooked, assemble the three toppings onto the rounds of taro
  • Top with some vegan cheese (optional) and serve
