Healthy Breakfast Bites 

I start work quite early in the morning so I don’t have the time for a sit down breakfast. A protein rich breakfast is extremely important (I’m sure you have heard this too many times!!) which is why I keep creating and making different recipes. I made these new on the go bites that contain wholegrains which have slow releasing properties that will keep you feeling full for longer, lower body weight, help diabetes and help cholesterol levels. They also have dates for energy and concentration (won’t spike your blood sugar) and peppermint extract to beat the bloat or any indigestion.

These bites can be made into any shape, completely gluten free and vegan and contain no refined sugars. I’ve added up lots of healthy ingredients to make sure it’s a nutritious meal.

Prep time: 5 minutes 

Chia egg: 6-8 minutes 

Cook time: 12 minutes 


Ingredients: (made 10 cookies) 

Dry:

  • 1/2 cup Organic almond flour
  • 1/2 cup Organic GF oats
  • 3/4 cup vegan protien powder (optional)
  • Handful of Chopped dates
  • Handful of vegan dark chocolate chips (70-85% preferred)
  • Tsp baking powder
  • 1/2 tsp salt
  • Tsp cinnamon
  • Tsp nutmeg
  • Tsp organic peppermint oil

Wet:

  • 80ml Chia / flax egg
  • 100ml organic melted coconut oil
  • 20-30ml organic maple syrup

Method: 

  • Heat the oven to 150°c
  • Simply combine the dry ingredients into the wet and mix till smooth in a large mixing bowl
  • Taste before cooking and add in more wet or dry ingredients as desired
  • Roll into your preferred  shape and size and place onto a baking sheet for 12 minutes
  • I find it best to let the cookies cool and harden a little bit more in the oven
  • You can keep them on the counter in a secure box for 7 days.

*chia egg – add chia seeds into a small cup of water until fully jelled. Ratio of 1 part chia to 3 parts water
