Vegan Pomegranate Fudge

This dessert is one my of ultimate favorites, it’s so decadent and rich which is wonderful for special occasions. So keep this one in mind for birthdays, anniversaries or dinner parties. Everything is gluten free, vegan and organic, this dessert is full of healthy fats, no refined sugars, high in anti-oxidants and superfoods. It’s smooth and soft and with a slightly sweet centre and a bitter topping.

Prep Time: 10 minutes

Cooking Time: 5 Minutes

Set: 3-4 hours


Ingredients: (made one standard loaf pan, x 6 2″slices)

Filler:

  • Fresh Pomegranate (save 3/4 for the topping)
  • Dried Goji berries
  • Dried Mulberries

The Fudge:

  • 2 Tsbp Coconut butter
  • 2 Tbsp Coconut Cream
  • 1.5 Tsbp Maple Syrup
  • 100-120 grams of dark chocolate (75-85%)
  • 1/4 teaspoon of sea salt

Topping:

  • 1.5 Tbsp Cocoa Powder OR Coffee powder
  • 1 Tbsp Cinnamon
  • 1/2 Tbsp Coconut sugar (if you have a sweet tooth)


Method:

  • Before starting; place the can of coconut cream into the fridge / freezer until hardened, around 2 hours)
  • Don’t shake it but allow it to naturally separate, carefully remove only the top layer of the cream and save the remaining coconut water for another recipe
  • On a low heat add in the fudge ingredients into a saucepan
  • Stir until its melted and smooth
  • Add in the filler ingredients (you can honestly use whatever you have on hand or use your favorite dried / freeze dried fruits) and combine well
  • Transfer into a loaf pan lined with parchment paper

  • Place into the freezer for 3-4 hours (depending on the thickness)
  • Mix the toppings together and sprinkle evenly over the fudge
  • Top it off with some fresh pomegranate or fresh fruit
  • Slice and eat promptly
  • It can be stored in the freezer for a month.
