Triple Layered Pie (Vegan, Gluten Free)

In the mood for something really scrumptious, healthy but not too sweet? I must admit this recipe was some fun making I had zero measurements set and an unlimited supply of gluten free vegan paleo ingredients to play around with. It’s seriously delicious if you have a ‘slight’ sweet tooth! it’s definitely on the healthy side of pies, which of course can cost a fortune if found outside, so better make it yourself! I used natural ingredients and made the recipe pretty straight forward. The only rule is, you must make sure it’s kept quite cold during and after the process and must be set for at least 4 hours … During this time of anticipation, I went on a run! And came back to a treat! Depending on the size of mould you have just play around with the amounts and taste test along the way till you are satisfied with the result. I’ll only put the measurements if needed as a suggestion of course. Each layer has a completely different texture but combines nicely. Let’s get started, shall we….


Prep time: 30 minutes

Set time: 4 hours


Ingredients: 

Base: 

  • Raw Salted Peanuts
  • Soaked pitted dates + it’s juices
  • GF Oats
  • Coconut flakes

Middle: 

  • Vegan Dark Chocolate
  • Vanilla extract (1tsp)
  • Nut butter / powder
  • Coconut oil
  • Coconut milk
  • Coconut sugar / maple syrup (optional)
  • Corn starch (1/2 tbsp) 

Top: 

  • Coconut milk
  • Coconut sugar
  • Coconut oil
  • Corn starch (1/2 tbsp)
  • Vanilla extract (1tsp)

Topping:  

  • Raw cacao nibs
  • Vegan dark chocolate chips
  • Vegan dark chocolate sauce


Method: 

  • Line your mould of choice with cling film and place it in the freezer
  • Note: After each step and layer made, place the mould back in the freezer to make sure it sets well
  • Place the base ingredients into a food processor and mix until grounded and sticky
  • Press the mixture down firmly into the mould to create a base
  • For the filling and topping you will need a saucepan and spatula, heat the filling  until thick and smooth, layer onto the base
  • Do the same with the top ingredients, stirring consistently, layer onto the filling.
  • Carefully add the topping ingredients making sure it doesn’t sink in (optional to wait 30 mins)
  • Place in the freezer till ready.
  • Remove from the mould and slice into any shape you want. Enjoy!

  2. This looks SO good!! I will have to try it sometime!! You cannot tell from the picture that it is free of gluten, dairy, and eggs!!😋
