Christmas Recipe 1: Cranberry Marshmallow Bites

Hey Friends,

Sorry it’s been a while since I actually posted a written recipe, it’s been a hectic few months, but hopefully you are all excited to dig into your Christmas feast!

I have two sweet treat recipes for you this year along with some savoury dishes, so stay tuned along with my Instagram account, where I post more often @coconutandwhat

Let’s get started on the first one, this one is great for sharing, especially for kids, simple to make and Christmas themed. As always depending on your mould use the required qty. If you get stuck just send me a message ☺️

Prep Time: 5 minutes

Cook Time: 10 minutes

Chill Time: 3-4 hours


  • Plain vegan marshmallows
  • Brown Rice Syrup 
  • Coconut Butter
  • Vanilla Extract, pinch of salt
  • Plain Gluten free rice Krispies 
  • Dried Cranberries
  • Organic Food colouring, Red & Green


  • In a bain-marie combine the ingredients in red and melt until smooth
  • Remove from the heat and add in the ingredients in green
  • Combine well till every piece of rice krispies is coated
  • Place into a mould lined with parchment paper
  • Drizzle on the food colouring then let it set in the fridge or freezer
  • Slice into bite-sized pieces and enjoy!
