Herby Vegan cheese 

Assuming your not consuming animal cheese – don’t get me started on what’s really in that stuff along with what the animals have to go through! On a lighter note you can make your own ‘cheese’ at home, all plant based, making soft or hard cheese adding in your favourite ingredients. You may or may not have access to plant-based cheese however even some brands have terrible additives, so make sure you know which one to buy.

Prep time: 10 mins (+2 hrs soaking)

Cook time: 5 minutes

Set time: 2+ hours


  • Raw cashew nuts
  • Garlic cloves
  • Pink salt + pepper
  • Agar agar powder
  • Water
  • Nutritional yeast
  • Additional herbs of choice (paprika, onion, hemp seeds, chives, basil, tomato powder etc….)


  • Soak the nuts for at least 2 hours
  • Wash and rinse
  • Blend with remaining ingredients until smooth
  • Transfer to a saucepan, stir on low until it has thickened up
  • Place into your mold of choice and refrigerate when cooled
  • Slice and use as it is or add to a hot dish

I made a huge batch, I create slices and keep refrigerated till use. Because of the agar agar (sourced from seaweed) it remains intact very well, if your looking for a softer cheese or cheese dip then add only a small amount.
