Raw Cauliflower ‘Rice’ Salad

Hopefully, where you are it’s nice and sunny! There is nothing better on a hot summers day than a nice big bowl of fresh food. Fresh/raw food will boost and balance your energy, help your mood levels, regulate your blood sugar, keep you full and provide you with the correct vitamins and minerals. You can use it as a side dish or a main meal, it is very versatile so you can add in what you like. Normally 2 heads of cauliflower are enough for 3 people with all the fillings.

Ready In: 15 Minutes

(With pre-made sprouted beans)


Ingredients:

  • Raw Cauliflower
  • Raw Sprouted Beans (mung beans, garbanzo, adzuki beans, lentil)
  • Raw Garlic Chives (Chopped)
  • Raw Pumpkin + Sunflower seeds
  • Sun Dried Cranberries – for a hint of sweetness (optional)
  • Baby tomatoes for decoration (optional)

Dressing:

  • Cold pressed Olive |Flax | Sacha Inchi Oil
  • Apple Cider Vinegar + a squeeze of lemon
  • Himalayan Salt + Cracked pepper
  • Whole grain mustard / White Miso Paste
  • (1 part vinegar to 3 parts olive oil)

Method:

  • Wash and separate the stems of the cauliflower
  • Place the pieces into a food processor until ground
  • Simply whisk the dressing together
  • Combine the ingredients for the salad above in a large bowl and enjoy!

Sprouted Beans at Home:

  • Rinse the chosen beans until the water runs clear
  • Place them in a bowl for 6 hours/overnight
  • They will swell 2-3 times their size
  • Rinse and place the beans into a jar covered with a paper towel/cheesecloth and store in a dark place
  • Rinse daily until they sprout, they will be done within 2-3 days

*because of the cauliflower this recipe is not Fodmap friendly you can substitute it for pre-cooked and cooled Millett, quinoa, amaranth or buckwheat (pseudograins) and cooked veggies.
